To cook with chocolate pasta does require a bit of re-imagining of the usual approach to pasta. A red sauce will be something fruit-based, like raspberry, cherry or orange. A white sauce will be creamy and sweet, perhaps with a touch of Champagne. Garnishes of berries, mint, toasted nuts or chocolate shavings take the place of Parmesan, garlic and basil.

Cooking Chocolate Pasta
Cooking chocolate pasta isn't all too different from cooking any other form of pasta. It's still about texture and tenderness. You might prefer chocolate pasta when it's not quite as al dente as you might like a vegetable one, or you might like it to have some bite to it. This can really vary depending on the type of pasta.
If you are doing ravioli, you have to take extra care to not over-cook them, or the tiny pasta pillows tend to burst. Only heat the water just enough to get it to boil and cook the pasta just until tender, then remove and rinse immediately to cool them.
No matter what the pasta, you will want to make sure it is extremely well-drained, as the pasta water will not contribute to any sauces, unlike when cooking conventional pasta. I do not salt or oil the water when cooking chocolate pasta as neither adds to the finished product or taste.

The pasta dish can be served either warm or chilled, depending on what time of year you are serving it, whether it's a dessert course or if it's a stand-alone treat.
Topping Ideas:
Ice Cream - Classic vanilla, softened just a bit can top a chocolate pasta dish elegantly. Or try a orange sherbet or mint flavor for some nice contrast.
Fruit - Fruit sauces can be light or thick, clear or creamy, sweet or tart, smooth or chunky. What makes a fruit sauce top-notch is to work with whatever is ripe and in-season at the time. You can either make a simple sauce by cooking them gently until soft and then mashing with a spoon if you've got fresh fruit, or use a ready-made topping. You can also add a touch of something fresh (raspberries are amazing) on top of the sauce or add an accent of candied ginger if your chocolate pasta is really dark.
Whipped cream - Whipped cream really does taste best when you make it fresh right before serving it. No synthetics need apply.
Chocolate and other Sauces - A white chocolate sauce is a great accent to chocolate pasta especially with a dollop of fresh whipped cream. Or try a drizzle of a fruit-based liqueur if you're serving this for the holidays.

Thanks a lot relache,...I can see my diet going right out the window with one,..LOL. Sounds gross but anything with chocolate is worth the try. Kids would probally would think I was the kewlest mom if I made this too. A win win situation !!!!

Nellie, I learned about it from one of the pasta vendors at Seattle's Pike Place Market who makes a chocolate fettucine. I was too curious to not taste when the guy at the booth offered a sample to nibble. For a holiday party, it's definitely not the usual dessert...
I have never heard of this gourmet invention. But this Italian girl will definitely have to give it a whirl.
